What is invoice data extraction?

Invoice data extraction is the process of turning an invoice document - which is designed for a person to read - into structured data a system can use. It usually has three parts:

Invoices are harder than they look: layouts vary between suppliers, totals and tax appear in different places, line-item tables wrap across pages, and scans introduce OCR noise. A good extractor handles all of that without setup.
